The Importance of First-In First-Out (FIFO) rotation in Foodservice cannot be understated. It is part of the Food Safety National Standard testing program “Serv-Safe” flow-of-food. FIFO and proper food rotation strategies are a part of the USDA best practices to all their agencies, best-practices-minimize-food-waste.
